So. I had nothing better to do today, so I decided to make a small ‘walkthrough’ on how I make a Tiramisù. This isn't exactly like a usual Tiramisù, since it's a lot less rigid and, well, tastes quite a bit differently. Regardless, I like it and I hope I'm not wasting my time with this or, in the worst case, ruin someone's dessert.
Alright, let's get started. What you'll need for this is: -3 eggs -25g sugar -Lady's fingers -5dl milk -250g mascarpone -instant coffee -chocolate powder -cooking utensils
As a first step, separate the albumen from the yolk. I don't care what you do with the albumen, as long as you don't mix it into this, or do something nasty with it. Put the yolk into the bowl and add the sugar. Mix this for a little while until the sugar has dissolved. Make sure not to mix too fast, otherwise it'll become a mess. Now add the mascarpone piece by piece. It takes a while for it to dissolve, and I'd rather recommend not using the mixer for this until it is already in small pieces. Once everything has turned into a nice cream, add in some of the instant coffee powder. Make sure not to add too much. Tasting it again and again after adding a bit helps. After that, let the cream stay for a bit so that the coffee powder can dissolve properly. In the meantime we'll prepare the lady's fingers. Take a glass and put a part of the milk in it. Make sure not to fill it up too much, otherwise it'll overflow afterwards. Then add some chocolate powder to it. In case you're too lazy to make that dissolve properly, taking some regular milk-chocolate powder will do as well. Now take a lady's finger and dunk it into the chocolate milk quickly. Make sure to turn it around so you get both ends full of milk. It's a bit difficult to time this right, as leaving it in the milk too long will make it fall apart and taking it out too quickly will leave it hardened still. I'd recommend rather being a bit too quick, since you can still pour some more milk over it later on. Anyway, put the lady's fingers into the form one after another to form a first layer. Now pour the cream over it. Depending on how many forms you're expecting to fill with this / how many layers you're going to make, you'll have to divide it up. Repeat the previous two steps for as many layers as you need. In my case, I simply added another layer of lady's fingers As a final touch you can spray some chocolate powder over it. Be very careful with that though, as chocolate powder can quickly become too strong and dry, so having a very thin layer of that, if at all, is crucial. Now wrap the form in plastic and put it into the fridge. If possible into a 0°C drawer, if you have one. Do not put it into the freezer! Frozen Tiramisù is very difficult to fix. Repeat the same for the remaining forms. Now clean up the god damn mess you made. Wait until it is cold (6-12 hours) Serve in appropriate sizes (all of it at once) and enjoy!
